I think the name Elizabeth goes well with Emily. Plus, Elizabeth was the Virgin Mary's cousin, who carried Peter at the same time that Mary carried Jesus, so it is somewhat a Biblical name.
Emily Victoria is pretty and feminine.

I like Charlene if you want to go with a family name. Emily Charlene sound really pretty. I'd avoid using Emily with a middle name that starts with E or A or L. You need to keep an eye on what her initials would be... for example, you might want Emily Lyn Mathis, but her initials would be ELM. If you used Emily Ann Mathis, that would be fine, but if she married a Thompson, she would be EAT.
