I don't know if you can. Once they are on there it is a legal document. The only way I know is to have the child be adopted and even then the father has to agree to the adoption and it costs. Call the clerk at your local courthouse and ask what the procedure is. All states have different laws. You have to have a lawyer for that also. It's like getting married, easy to get there not so to get out.
A birth certificate is a legal binding document. It is not possible to remove the name of the father off the certificate once the file is signed and sealed unless you could prove that he is infact not the father.

For eg. If you had someone sign the certificate and you truely believed this man to be the father and later found out that he wasn't then you can have it changed but you have to show legal proof.
