Is this a legal question. A person can acknowlage fatherhood anytime before he dies. He will only have rights if no one else adopts the child first.
Until the day you die. If the child was adopted w/o your knowledge you still have the right to petition for legal rights.
Why would anyone wait to claim their own flesh and blood?
Also, take into consideration if the child has bonded with somebody else they may think is their father. If so, it could be really confusing for the child if someone were to disrupt what is already going on. And if the child has bonded with somebody else, it would still not be a bad idea to let your child know that you are the natural father.

Legally you can accept paternity from the moment your child is born until the moment before you pass on as long as you have not already signed anything denying paternity. Morally it should be done as soon as possible for the best intrest of the child. If you question the paternity of the child get a DNA test. If the mother refuses you can petition the court to order one. But whatever you do, the sooner the better. You dont want to miss out on any bonding with your child or miss any milestones in their life
